so a week or so ago, i ordered pizza from a vegan pizza place. to be honest, it was just ok. lots of veggies which was good, but it was loaded with soy cheese- that was not melted, or even warmed. when i took a bite, it fell apart all over the place- even when eating with a knife & fork!
enough of that, i thought! i called up three of cups and made them improvise for me. roasted garlic and eggplant. NO cheese. and throw on some peppers and mushrooms while you're at it. it was DELICIOUS! i didn't even miss the cheese.
